Pungent!

Pungent spices are those that give an instant burst of flavor. They are fairly strong and only needing a small amount for effect. Because you use such a small amount amateur cooks often leave them out of their cooking – but this is a mistake. They are the key to many restaurant tastes. Some of the more common pungent spices are – cardamom; cloves; cumin; fenugreek; ginger; saffron.
